Pumpkin Fritters

Pumpkin Fritters is a sweet favorite and goes well with curry dishes like Bobotie.
Ingredients:
2 cups pumpkin*, cooked and mashed
1/4 teaspoon salt
2 tablespoons flour
1 egg, beaten
1 teaspoon baking powder
butter or oil
sugar mixed with ground cinnamon (1/4 cup sugar and 1 teaspoon cinnamon sugar)
lemon slices


1. Mix pumpkin*, egg, flour, baking powder and salt together.
2. Heat butter in a frying pan and drop in spoonfuls of mixture.
3. Fry on both sides until golden.
4. Serve hot, sprinkled with cinnamon sugar and garnish with lemon slices.
*If pumpkin is watery, add more flour.

This dish is enough for 4 people.
