Although some confuse this with Invincible (although originally it did mean that but was replaced by invincible), Immortal means to only die due to physical harm. Or that you can't get sick or grow old, Only physical harm can kill you. Immortals generally grew to appear the age of 20 however some never aged, some imortals if given a deadly physical blow will just be frozen, stoned ,etc. Like Ganon from The Legend of Zelda. Some have twisted this meaning of immortality to also include physical harm as an immunity (without stoning or something) and therefore turn it into another word for invincible. Some immortals immortality comes from there soul meaning even at death they just have to find a host to use and then over time turn the host into themselves, or they are reincarnated as themself. Immortality can also refer to a memory of something that will never die.
