I've been watching a lot of videos lately about preparing and cooking squirrel.

I didn't know about the glands under their legs. I was watching a cooking video and the guy cut out the glands, which look like fat, and tossed them away.

Does anyone know why the glands are bad to leave in for cooking and eating?

We used to hunt squirrels and eat them when we were all younger. Never heard about glands but they do get a parasite we called wolves just under the skin. It was understood that you didn't eat a squirrel until there had been a couple of heavy frosts which supposedly killed the parasite.

Back in the depression days people had to eat what they could and squirrel was a treat. One of my neighbors had a technique of using a piece of barbed wire to remove a squirrel from a hollow tree. He also had a small terrier type dog that he used hunting them.

I always used to still hunt on the rim of a ridge for them. Spent lots of afternoons after school with a .22 looking to pick one off. If you got 3 or 4 you could get your mom to cook a stew with potatoes and carrots.
